Château Ausone 1961

There are moments when you just want to pinch yourself to know you are not dreaming, and this was one. Sitting in the dining room as Edouard Vauthier opened one of his rare bottles of the 1961 is a moment which will forever be etched in my memory. What is extraordinary about this wine above all is the bouquet. I held my glass further and further away and still the scent hung in the air, faded old rose and notes of autumn hedgerows, utterly romantic. When I finally took a sip, harmony, gentle tannins holding a melange of tertiary fruit, reminding me of a garden in late autumn, remarkably fresh still and holding each precious note of flavour to the very end.
